Nkui Nkui Beef (spicy Beef Stew)

Ingredients

  • 2 lbs beef, cut into cubes
  • 2 onions, chopped
  • 4 tomatoes, diced
  • 3 cloves garlic, minced
  • 2 inches fresh ginger, grated
  • 2 tbsp vegetable oil
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 2 tsp paprika
  • 1 tsp cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Season the beef with salt, pepper, paprika, and cayenne pepper.
  2. Heat the vegetable oil in a large pot over medium heat. Add the seasoned beef and cook until browned on all sides. Remove the beef from the pot and set aside.
  3. In the same pot, add the onions, garlic, and ginger. Sauté until fragrant.
  4. Add the diced tomatoes and tomato paste. Cook for 5 minutes, stirring occasionally.
  5. Return the browned beef to the pot. Pour in the beef broth and bring to a simmer.
  6. Cover the pot and let the stew simmer for 1.5 to 2 hours, or until the beef is tender.
  7. Adjust seasoning with salt and pepper, if needed.
  8. Serve the Nkui Nkui Beef hot with your choice of side dish.
