Nkui Nkui Beef (spicy Beef Stew)
Nkui Nkui Beef, also known as Spicy Beef Stew, is a traditional Cameroonian dish that is bursting with flavor and spice. This hearty stew is perfect for a cozy family dinner or a special occasion.
Ingredients
- 2 lbs beef, cut into cubes
- 2 onions, chopped
- 4 tomatoes, diced
- 3 cloves garlic, minced
- 2 inches fresh ginger, grated
- 2 tbsp vegetable oil
- 2 tbsp tomato paste
- 2 cups beef broth
- 2 tsp paprika
- 1 tsp cayenne pepper
- Salt and pepper to taste
Instructions
- Season the beef with salt, pepper, paprika, and cayenne pepper.
- Heat the vegetable oil in a large pot over medium heat. Add the seasoned beef and cook until browned on all sides. Remove the beef from the pot and set aside.
- In the same pot, add the onions, garlic, and ginger. Sauté until fragrant.
- Add the diced tomatoes and tomato paste. Cook for 5 minutes, stirring occasionally.
- Return the browned beef to the pot. Pour in the beef broth and bring to a simmer.
- Cover the pot and let the stew simmer for 1.5 to 2 hours, or until the beef is tender.
- Adjust seasoning with salt and pepper, if needed.
- Serve the Nkui Nkui Beef hot with your choice of side dish.
