Nkui Nkui Goat (spicy Goat Meat Stew)

Ingredients

  • 2 lbs goat meat, cut into chunks
  • 2 onions, chopped
  • 3 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 scotch bonnet peppers, chopped
  • 1 tsp ground crayfish
  • 1 tsp ground white pepper
  • 1/2 cup palm oil
  • Salt to taste

Instructions

  1. Season the goat meat with salt and set aside for 10 minutes.
  2. In a large pot, heat the palm oil over medium heat.
  3. Add the onions, garlic, ginger, and scotch bonnet peppers. Sauté until the onions are translucent.
  4. Add the goat meat to the pot and brown on all sides.
  5. Stir in the diced tomatoes, ground crayfish, and white pepper.
  6. Pour in enough water to cover the meat, then cover the pot and simmer for 1.5 to 2 hours, or until the meat is tender.
  7. Adjust the seasoning with salt if needed.
  8. Serve the Nkui Nkui Goat hot with a side of boiled plantains or rice.
