Ingredients
- 4 chicken thighs
- 1 cup peanut butter
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 teaspoon ginger, grated
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 2 cups chicken broth
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onions are soft and translucent.
- Add the chicken thighs to the pot and brown them on all sides.
- Stir in the peanut butter, paprika, and cayenne pepper. Mix well to coat the chicken.
- Pour in the chicken broth and bring the mixture to a simmer. Cover the pot and let the chicken cook for 30-35 minutes, or until it's fully cooked and tender.
- Season with salt and pepper to taste.
- Serve the Nkui Nkui hot with steamed rice or boiled plantains.
