Ingredients

  • 4 chicken thighs
  • 1 cup peanut butter
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onions are soft and translucent.
  2. Add the chicken thighs to the pot and brown them on all sides.
  3. Stir in the peanut butter, paprika, and cayenne pepper. Mix well to coat the chicken.
  4. Pour in the chicken broth and bring the mixture to a simmer. Cover the pot and let the chicken cook for 30-35 minutes, or until it's fully cooked and tender.
  5. Season with salt and pepper to taste.
