Nkwobi Tacos

Ingredients

  • 1 kg cow foot, cut into bite-sized pieces
  • 2 cups palm oil
  • 1 onion, finely chopped
  • 2 tbsp ground crayfish
  • 2 tsp ground ehu seeds (calabash nutmeg)
  • 2 tbsp ground utazi leaves
  • Salt to taste
  • 1 tsp ground Cameroon pepper
  • 8 small tortillas
  • 1/2 cup chopped onions and tomatoes for garnish

Instructions

  1. In a pot, combine the cow foot, palm oil, chopped onion, ground crayfish, ehu seeds, utazi leaves, salt, and Cameroon pepper.
  2. Cover the pot and cook over medium heat for 1 hour, stirring occasionally, until the cow foot is tender and the palm oil has turned from red to yellow.
  3. Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  4. Fill each tortilla with a generous portion of the nkwobi mixture and garnish with chopped onions and tomatoes.
