Nkwobi Tacos
Nkwobi Tacos are a fusion dish that combines the rich flavors of Nigerian Nkwobi with the convenience of Mexican tacos. This recipe offers a unique twist on traditional Nigerian cuisine, perfect for a flavorful and satisfying meal.
Ingredients
- 1 kg cow foot, cut into bite-sized pieces
- 2 cups palm oil
- 1 onion, finely chopped
- 2 tbsp ground crayfish
- 2 tsp ground ehu seeds (calabash nutmeg)
- 2 tbsp ground utazi leaves
- Salt to taste
- 1 tsp ground Cameroon pepper
- 8 small tortillas
- 1/2 cup chopped onions and tomatoes for garnish
Instructions
- In a pot, combine the cow foot, palm oil, chopped onion, ground crayfish, ehu seeds, utazi leaves, salt, and Cameroon pepper.
- Cover the pot and cook over medium heat for 1 hour, stirring occasionally, until the cow foot is tender and the palm oil has turned from red to yellow.
- Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side.
- Fill each tortilla with a generous portion of the nkwobi mixture and garnish with chopped onions and tomatoes.
