Ingredients
- 1 cup dried chickpeas, soaked overnight
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 pound fresh spinach, chopped
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
- Stir in the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the soaked chickpeas, chopped spinach, and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 25-30 minutes, or until the chickpeas are tender.
- Season the stew with salt and pepper to taste. Serve hot and enjoy!
