Ingredients

  • 1 cup dried chickpeas, soaked overnight

  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 pound fresh spinach, chopped
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
  2. Stir in the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  3. Add the soaked chickpeas, chopped spinach, and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 25-30 minutes, or until the chickpeas are tender.
  4. Season the stew with salt and pepper to taste. Serve hot and enjoy!
