Nokhod Polo (spicy Chickpea Stew)
Nokhod Polo is a delicious and spicy chickpea stew that hails from Caspian cuisine. This hearty and flavorful dish is perfect for a cozy dinner on a cold evening.
Ingredients
- 2 cups basmati rice
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1/2 teaspoon cayenne pepper
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 3 tablespoons olive oil
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Stir in the turmeric, cumin, and cayenne pepper, and cook for another minute until fragrant.
- Add the chickpeas to the pot and stir to combine with the spices and aromatics.
- Season with salt and pepper, then pour in 4 cups of water and bring to a boil.
- Once boiling, add the rinsed rice to the pot and give it a gentle stir to combine with the chickpeas and spices.
- Reduce the heat to low, cover the pot, and let the Nokhod Polo simmer for 30-35 minutes, or until the rice is cooked through and the liquid is absorbed.
- Fluff the rice with a fork, then sprinkle the chopped parsley on top before serving.
