Nokhod Polo (spicy Chickpea Stew)

Ingredients

  • 2 cups basmati rice
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 3 tablespoons olive oil

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  3. Stir in the turmeric, cumin, and cayenne pepper, and cook for another minute until fragrant.
  4. Add the chickpeas to the pot and stir to combine with the spices and aromatics.
  5. Season with salt and pepper, then pour in 4 cups of water and bring to a boil.
  6. Once boiling, add the rinsed rice to the pot and give it a gentle stir to combine with the chickpeas and spices.
  7. Reduce the heat to low, cover the pot, and let the Nokhod Polo simmer for 30-35 minutes, or until the rice is cooked through and the liquid is absorbed.
  8. Fluff the rice with a fork, then sprinkle the chopped parsley on top before serving.
