Nom Banh Chok (stir-fried Rice Noodles)

Ingredients
- 1 package of rice noodles
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 bell pepper, julienned
- 1 carrot, julienned
- 1 cup bean sprouts
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sugar
- Salt and pepper to taste
Instructions
- Soak the rice noodles in hot water for 5-7 minutes until they are soft. Drain and set aside.
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Add the onion and garlic, and stir-fry for 2-3 minutes until fragrant.
- Add the bell pepper, carrot, and bean sprouts, and stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
- Add the soaked rice noodles to the pan, along with the soy sauce, oyster sauce, and sugar. Toss everything together until well combined and heated through.
- Season with salt and pepper to taste.
- Remove from heat and serve hot.
