Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup whole almonds, toasted and chopped
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, beat the eggs and vanilla extract together. Gradually add the egg mixture to the dry ingredients, mixing until a dough forms.
- Stir in the chopped almonds until evenly distributed in the dough.
- Divide the dough in half and shape each half into a log about 12 inches long and 2 inches wide. Place the logs on the prepared baking sheet, leaving space between them.
- Bake for 25 minutes, or until the logs are firm to the touch and lightly browned.
- Remove the logs from the oven and let them cool for 10 minutes. Reduce the oven temperature to 325°F (165°C).
- Using a serrated knife, cut the logs into 1/2-inch slices. Place the slices cut-side down on the baking sheet.
- Bake for an additional 10 minutes, then flip the biscotti over and bake for another 10 minutes, or until they are golden and crisp.
- Transfer the biscotti to a wire rack to cool completely.
