Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole almonds, toasted and chopped

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, beat the eggs and vanilla extract together. Gradually add the egg mixture to the dry ingredients, mixing until a dough forms.
  4. Stir in the chopped almonds until evenly distributed in the dough.
  5. Divide the dough in half and shape each half into a log about 12 inches long and 2 inches wide. Place the logs on the prepared baking sheet, leaving space between them.
  6. Bake for 25 minutes, or until the logs are firm to the touch and lightly browned.
  7. Remove the logs from the oven and let them cool for 10 minutes. Reduce the oven temperature to 325°F (165°C).
  8. Using a serrated knife, cut the logs into 1/2-inch slices. Place the slices cut-side down on the baking sheet.
  9. Bake for an additional 10 minutes, then flip the biscotti over and bake for another 10 minutes, or until they are golden and crisp.
  10. Transfer the biscotti to a wire rack to cool completely.
