Noodle Paella (fideuà)
Noodle Paella, also known as Fideuà, is a traditional dish from the Valencian region of Spain. This delicious and flavorful dish is made with short noodles, seafood, and a variety of aromatic spices.
Ingredients
- 250g short noodles
- 400g mixed seafood (shrimp, squid, mussels)
- 1 onion, chopped
- 2 tomatoes, grated
- 3 garlic cloves, minced
- 1 teaspoon smoked paprika
- 1 pinch of saffron threads
- 1 liter fish or seafood broth
- Extra virgin olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a paella pan or large skillet over medium heat.
- Add the chopped onion and minced garlic, sauté until softened.
- Add the grated tomatoes, smoked paprika, and saffron threads. Cook for a few minutes until the tomatoes are reduced.
- Add the seafood and cook for 2-3 minutes.
- Add the short noodles to the pan and stir to coat them with the tomato mixture.
- Pour in the fish or seafood broth, season with salt and pepper, and let it simmer for about 10-12 minutes until the noodles are cooked and the broth is absorbed.
- Remove from heat and let it rest for a few minutes before serving.
