Ingredients

  • 250g short noodles
  • 400g mixed seafood (shrimp, squid, mussels)
  • 1 onion, chopped
  • 2 tomatoes, grated
  • 3 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 pinch of saffron threads
  • 1 liter fish or seafood broth
  • Extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a paella pan or large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sauté until softened.
  3. Add the grated tomatoes, smoked paprika, and saffron threads. Cook for a few minutes until the tomatoes are reduced.
  4. Add the seafood and cook for 2-3 minutes.
  5. Add the short noodles to the pan and stir to coat them with the tomato mixture.
  6. Pour in the fish or seafood broth, season with salt and pepper, and let it simmer for about 10-12 minutes until the noodles are cooked and the broth is absorbed.
  7. Remove from heat and let it rest for a few minutes before serving.
