Noodle Soup (bhutanese Thukpa)
Noodle Soup, also known as Thukpa, is a popular dish in Nepalese cuisine. This recipe for Noodle Soup is inspired by the Bhutanese version of Thukpa, which is a flavorful and comforting soup filled with noodles, vegetables, and a delicious broth.
Ingredients
- 200g egg noodles
- 1 onion, thinly sliced
- 2 carrots, julienned
- 1 cup cabbage, shredded
- 1 cup spinach, chopped
- 4 cups vegetable broth
- 2 tbsp soy sauce
- 1 tsp ginger, minced
- 1 tsp garlic, minced
- 1 tsp chili flakes
- Salt to taste
- Pepper to taste
- 2 tbsp oil
Instructions
- Heat oil in a large pot over medium heat. Add the sliced onion, ginger, and garlic. Sauté until the onion is soft and translucent.
- Add the julienned carrots and shredded cabbage to the pot. Cook for 2-3 minutes until the vegetables start to soften.
- Pour in the vegetable broth and bring to a boil. Add the soy sauce, chili flakes, salt, and pepper. Let the broth simmer for 10 minutes to allow the flavors to meld.
- While the broth is simmering, cook the egg noodles according to the package instructions. Drain and set aside.
- Add the cooked noodles and chopped spinach to the pot. Stir well and let the soup simmer for an additional 5 minutes.
- Adjust the seasoning if needed. Serve the Noodle Soup hot, garnished with fresh cilantro or green onions.
