Noodle Soup (bhutanese Thukpa)

Ingredients

  • 200g egg noodles
  • 1 onion, thinly sliced
  • 2 carrots, julienned
  • 1 cup cabbage, shredded
  • 1 cup spinach, chopped
  • 4 cups vegetable broth
  • 2 tbsp soy sauce
  • 1 tsp ginger, minced
  • 1 tsp garlic, minced
  • 1 tsp chili flakes
  • Salt to taste
  • Pepper to taste
  • 2 tbsp oil

Instructions

  1. Heat oil in a large pot over medium heat. Add the sliced onion, ginger, and garlic. Sauté until the onion is soft and translucent.
  2. Add the julienned carrots and shredded cabbage to the pot. Cook for 2-3 minutes until the vegetables start to soften.
  3. Pour in the vegetable broth and bring to a boil. Add the soy sauce, chili flakes, salt, and pepper. Let the broth simmer for 10 minutes to allow the flavors to meld.
  4. While the broth is simmering, cook the egg noodles according to the package instructions. Drain and set aside.
  5. Add the cooked noodles and chopped spinach to the pot. Stir well and let the soup simmer for an additional 5 minutes.
  6. Adjust the seasoning if needed. Serve the Noodle Soup hot, garnished with fresh cilantro or green onions.
