Noodle Soup (sopa De Fideos)

Ingredients

  • 8 cups chicken or vegetable broth
  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 8 ounces fideos or angel hair pasta, broken into 1-inch pieces
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onion and garlic, and cook until softened.
  2. Add the carrot and celery, and cook for a few minutes until they begin to soften.
  3. Stir in the ground cumin and dried oregano, and cook for another minute to toast the spices.
  4. Pour in the chicken or vegetable broth and bring to a simmer.
  5. Add the fideos or angel hair pasta to the pot and cook until al dente, about 8-10 minutes.
  6. Season the soup with salt and pepper to taste.
  7. Serve the noodle soup hot, garnished with fresh cilantro.
