Ingredients
- 8 cups chicken or vegetable broth
- 1 tablespoon vegetable oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 8 ounces fideos or angel hair pasta, broken into 1-inch pieces
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the carrot and celery, and cook for a few minutes until they begin to soften.
- Stir in the ground cumin and dried oregano, and cook for another minute to toast the spices.
- Pour in the chicken or vegetable broth and bring to a simmer.
- Add the fideos or angel hair pasta to the pot and cook until al dente, about 8-10 minutes.
- Season the soup with salt and pepper to taste.
- Serve the noodle soup hot, garnished with fresh cilantro.
