Ingredients

  • 4 shallots, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons chili paste
  • 2 tablespoons cooking oil
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, heat the cooking oil over medium heat. Add the shallots and garlic, and sauté until fragrant.
  2. Add the chili paste and sliced pork belly to the pot. Cook until the pork is browned.
  3. Pour in the chicken stock and coconut milk. Bring the broth to a simmer.
  4. Add the soy sauce, fish sauce, and sugar. Season with salt to taste.
  5. Add the prawns to the broth and cook until they turn pink and opaque.
  6. Cook the yellow noodles according to the package instructions, then divide them into serving bowls.
  7. Ladle the prawn and pork broth over the noodles. Garnish with fresh cilantro.
