Nordic Cabbage Rolls: Stuffed Cabbage with Lingonberry Sauce (Nordisk Kåldolmer: Fylt Kål med Tyttebærsaus)
Nordisk Kåldolmer, or Nordic Cabbage Rolls, are a traditional dish in New Nordic cuisine. These cabbage rolls are filled with a delicious mixture of meat and rice, then served with a tangy lingonberry sauce. This recipe is a perfect representation of the fresh and simple flavors of Nordic cuisine.
Ingredients
- 1 head of cabbage
- 1 pound ground pork
- 1/2 cup uncooked rice
- 1 onion, finely chopped
- 1 egg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground allspice
- 1 cup lingonberries
- 1/2 cup water
- 1/4 cup sugar
Instructions
- Preheat the oven to 350°F (175°C).
- Bring a large pot of water to a boil. Carefully remove 12 large cabbage leaves from the head of cabbage and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
- In a mixing bowl, combine the ground pork, uncooked rice, chopped onion, egg, salt, pepper, and allspice. Mix well.
- Place a spoonful of the pork mixture onto each cabbage leaf. Roll the leaf, tucking in the sides, to form a cabbage roll. Place the rolls seam-side down in a large pot.
- In a separate saucepan, combine the lingonberries, water, and sugar. Bring to a simmer and cook for 5 minutes to make the lingonberry sauce.
- Pour the lingonberry sauce over the cabbage rolls in the pot. Cover and simmer over low heat for 1 hour.
- Serve the Nordic cabbage rolls with lingonberry sauce on top.
