Ingredients

  • 1 head of cabbage
  • 1 pound ground pork
  • 1/2 cup uncooked rice
  • 1 onion, finely chopped
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground allspice
  • 1 cup lingonberries
  • 1/2 cup water
  • 1/4 cup sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Bring a large pot of water to a boil. Carefully remove 12 large cabbage leaves from the head of cabbage and blanch them in the boiling water for 2-3 minutes. Remove and set aside to cool.
  3. In a mixing bowl, combine the ground pork, uncooked rice, chopped onion, egg, salt, pepper, and allspice. Mix well.
  4. Place a spoonful of the pork mixture onto each cabbage leaf. Roll the leaf, tucking in the sides, to form a cabbage roll. Place the rolls seam-side down in a large pot.
  5. In a separate saucepan, combine the lingonberries, water, and sugar. Bring to a simmer and cook for 5 minutes to make the lingonberry sauce.
  6. Pour the lingonberry sauce over the cabbage rolls in the pot. Cover and simmer over low heat for 1 hour.
  7. Serve the Nordic cabbage rolls with lingonberry sauce on top.
