Nordic Gravlax Salad

Ingredients

  • 1 lb fresh salmon fillet
  • 1/4 cup salt
  • 1/4 cup sugar
  • 1 bunch fresh dill
  • 1 cucumber, thinly sliced
  • 1 red onion, thinly sliced
  • 2 tbsp capers
  • 1 lemon, thinly sliced
  • 4 cups mixed greens

Instructions

  1. Combine the salt and sugar in a bowl.
  2. Place the salmon fillet on a large piece of plastic wrap.
  3. Sprinkle the salt and sugar mixture over the salmon.
  4. Top with a generous amount of fresh dill.
  5. Wrap the salmon tightly in the plastic wrap and refrigerate for 24 hours.
  6. After 24 hours, unwrap the salmon and rinse off the salt and dill.
  7. Thinly slice the salmon and arrange it on a serving platter.
  8. Top the salmon with the sliced cucumber, red onion, capers, and lemon slices.
  9. Serve the salmon and vegetable mixture over a bed of mixed greens.
