Ingredients
- 1 lb fresh salmon fillet
- 1/4 cup salt
- 1/4 cup sugar
- 1 bunch fresh dill
- 1 cucumber, thinly sliced
- 1 red onion, thinly sliced
- 2 tbsp capers
- 1 lemon, thinly sliced
- 4 cups mixed greens
Instructions
- Combine the salt and sugar in a bowl.
- Place the salmon fillet on a large piece of plastic wrap.
- Sprinkle the salt and sugar mixture over the salmon.
- Top with a generous amount of fresh dill.
- Wrap the salmon tightly in the plastic wrap and refrigerate for 24 hours.
- After 24 hours, unwrap the salmon and rinse off the salt and dill.
- Thinly slice the salmon and arrange it on a serving platter.
- Top the salmon with the sliced cucumber, red onion, capers, and lemon slices.
- Serve the salmon and vegetable mixture over a bed of mixed greens.
