- 1 bunch of kale, stems removed and leaves chopped
- 1/4 cup of red onion, thinly sliced
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of cucumber, diced
- 1/4 cup of radishes, thinly sliced
- 1/4 cup of feta cheese, crumbled
- 1/4 cup of walnuts, chopped
- 1/4 cup of dried cranberries
Instructions
- In a large bowl, combine the kale, red onion, cherry tomatoes, cucumber, and radishes.
- In a small bowl, whisk together the dressing ingredients.
- Pour the dressing over the salad and toss to coat.
- Sprinkle the feta cheese, walnuts, and dried cranberries over the top of the salad before serving.
