Nordisk Soppsuppe, or Nordic Mushroom Soup, is a classic dish in New Nordic cuisine. This recipe features the earthy flavors of chanterelle and forest mushrooms, creating a creamy and comforting soup that is perfect for the colder months.
Ingredients
- 500g chanterelle mushrooms, cleaned and chopped
- 300g mixed forest mushrooms, cleaned and chopped
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the chanterelle and forest mushrooms to the pot, and cook for 5-7 minutes until they release their juices.
- Pour in the vegetable broth and bring the soup to a simmer. Let it cook for 15-20 minutes.
- Stir in the heavy cream and season the soup with salt and pepper to taste. Simmer for an additional 5 minutes.
- Remove the pot from the heat and let the soup cool slightly. Using an immersion blender, blend the soup until smooth.
- Return the pot to the stove and reheat the soup over low heat. Adjust the seasoning if needed.
- Serve the creamy chanterelle and forest mushroom soup hot, garnished with a drizzle of cream and a sprinkle of chopped fresh herbs.
