Ingredients

  • 500g chanterelle mushrooms, cleaned and chopped
  • 300g mixed forest mushrooms, cleaned and chopped
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the chanterelle and forest mushrooms to the pot, and cook for 5-7 minutes until they release their juices.
  3. Pour in the vegetable broth and bring the soup to a simmer. Let it cook for 15-20 minutes.
  4. Stir in the heavy cream and season the soup with salt and pepper to taste. Simmer for an additional 5 minutes.
  5. Remove the pot from the heat and let the soup cool slightly. Using an immersion blender, blend the soup until smooth.
  6. Return the pot to the stove and reheat the soup over low heat. Adjust the seasoning if needed.
  7. Serve the creamy chanterelle and forest mushroom soup hot, garnished with a drizzle of cream and a sprinkle of chopped fresh herbs.
