Nordic Smoked Fish Chowder

Ingredients

  • 1 lb smoked white fish, flaked
  • 4 slices bacon, chopped
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 2 carrots, diced
  • 3 potatoes, diced
  • 4 cups fish or vegetable broth
  • 1 cup heavy cream
  • 2 tbsp all-purpose flour
  • 2 tbsp butter
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. In a large pot, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
  2. Add the chopped onion, celery, and carrots to the pot. Cook until the vegetables are softened.
  3. Stir in the flour and cook for 1-2 minutes to make a roux.
  4. Pour in the fish or vegetable broth and add the diced potatoes. Bring to a simmer and cook until the potatoes are tender.
  5. Add the flaked smoked fish and heavy cream. Simmer for a few minutes until the fish is heated through.
  6. Season with salt and pepper to taste. Serve the chowder hot, garnished with crispy bacon and fresh dill.
