Ingredients
- 4 medium-sized beetroots, peeled and cut into wedges
- 2 tablespoons olive oil
- Salt and pepper to taste
- 200g pickled herring fillets
- 1 red onion, thinly sliced
- 4 tablespoons apple cider vinegar
- 2 tablespoons honey
- 1 teaspoon whole grain mustard
- 100g mixed salad greens
Instructions
- Preheat the oven to 200°C (400°F).
- In a bowl, toss the beetroot wedges with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized.
- Meanwhile, in a small bowl, whisk together the apple cider vinegar, honey, and whole grain mustard. Add the sliced red onion and pickled herring fillets, tossing to coat. Let it marinate for 10 minutes.
- Arrange the mixed salad greens on a serving platter. Top with the roasted beetroot and the pickled herring mixture.
