Ingredients

- 1 cup (240ml) white vinegar

- 10 whole allspice berries
- 5 bay leaves
- 1 tsp salt
Instructions
- In a saucepan, combine the white vinegar, water, sugar, allspice berries, bay leaves, and salt. Bring to a simmer over medium heat, stirring until the sugar is dissolved. Remove from heat and let the mixture cool.
- Arrange the herring fillets and sliced red onion in a glass or plastic container. Pour the cooled vinegar mixture over the herring and onions, making sure they are completely submerged. Cover and refrigerate for at least 24 hours before serving.
