Ingredients
- 500g mixed seafood (such as shrimp, mussels, and salmon)
- 2 tablespoons butter
- 1 onion, diced
- 2 celery stalks, chopped
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 4 cups fish or vegetable broth
- 1 cup heavy cream
- 2 bay leaves
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion, celery, and carrots. Cook until the vegetables are softened, about 5 minutes.
- Add the cubed potatoes and mixed seafood to the pot. Pour in the fish or vegetable broth and add the bay leaves. Bring the mixture to a simmer and cook for 15-20 minutes, or until the potatoes are tender and the seafood is cooked through.
- Stir in the heavy cream and season the chowder with salt and pepper to taste. Simmer for an additional 5 minutes.
- Remove the bay leaves and discard. Serve the chowder hot, garnished with fresh dill.
