Ingredients

  • 2 tablespoons butter
  • 1 onion, diced
  • 2 celery stalks, chopped
  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 4 cups fish or vegetable broth
  • 1 cup heavy cream
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion, celery, and carrots. Cook until the vegetables are softened, about 5 minutes.
  2. Add the cubed potatoes and mixed seafood to the pot. Pour in the fish or vegetable broth and add the bay leaves. Bring the mixture to a simmer and cook for 15-20 minutes, or until the potatoes are tender and the seafood is cooked through.
  3. Stir in the heavy cream and season the chowder with salt and pepper to taste. Simmer for an additional 5 minutes.
  4. Remove the bay leaves and discard. Serve the chowder hot, garnished with fresh dill.
