Ingredients

  • 500g fresh salmon fillet, cut into chunks
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 1 leek, sliced
  • 2 potatoes, peeled and cubed
  • 1 liter fish or vegetable stock
  • 200ml heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion, carrots, celery, and leek. Cook until the vegetables are softened, about 5 minutes.
  2. Add the potatoes and stock to the pot. Bring to a boil, then reduce the heat and simmer for 15 minutes, or until the potatoes are tender.
  3. Add the salmon chunks and heavy cream to the pot. Simmer for an additional 5-7 minutes, or until the salmon is cooked through.
  4. Season the soup with salt and pepper to taste. Serve hot, garnished with fresh dill.
