Norsk Laksuppe (norwegian Salmon Soup)
Norsk laksuppe, or Norwegian Salmon Soup, is a traditional dish from the Nordic region that is both comforting and flavorful. This creamy soup is perfect for cold winter days and is a great way to enjoy the rich flavors of Norwegian cuisine.
Ingredients
- 500g fresh salmon fillet, cut into chunks
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 1 leek, sliced
- 2 potatoes, peeled and cubed
- 1 liter fish or vegetable stock
- 200ml heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the onion, carrots, celery, and leek. Cook until the vegetables are softened, about 5 minutes.
- Add the potatoes and stock to the pot. Bring to a boil, then reduce the heat and simmer for 15 minutes, or until the potatoes are tender.
- Add the salmon chunks and heavy cream to the pot. Simmer for an additional 5-7 minutes, or until the salmon is cooked through.
- Season the soup with salt and pepper to taste. Serve hot, garnished with fresh dill.
