Ingredients

  • 500g fresh white fish fillets, such as cod or haddock
  • 300g potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 eggs
  • 3 tbsp fresh parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp all-purpose flour
  • 2-3 tbsp vegetable oil for frying

Instructions

  1. In a large pot, boil the potatoes until tender. Drain and mash them, then set aside to cool.
  2. In a food processor, pulse the fish fillets until finely chopped. Transfer to a large bowl.
  3. Add the cooled mashed potatoes, chopped onion, eggs, parsley, salt, pepper, and flour to the bowl with the fish. Mix until well combined.
  4. Shape the mixture into round patties and place them on a plate. Refrigerate for 15 minutes to firm up.
  5. Heat the vegetable oil in a large skillet over medium heat. Fry the fish cakes for 3-4 minutes on each side, or until golden brown and cooked through.
  6. Transfer the cooked fish cakes to a paper towel-lined plate to drain any excess oil.
  7. Serve the Norwegian fish cakes with a creamy sauce and boiled potatoes.
