Norske Fiskekaker (norwegian Fish Cakes)
Norske fiskekaker, or Norwegian fish cakes, are a traditional dish in Nordic cuisine. These delicious fish cakes are made with fresh fish, potatoes, and seasonings, and are typically served with a creamy sauce and boiled potatoes.
Ingredients
- 500g fresh white fish fillets, such as cod or haddock
- 300g potatoes, peeled and diced
- 1 onion, finely chopped
- 2 eggs
- 3 tbsp fresh parsley, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 tbsp all-purpose flour
- 2-3 tbsp vegetable oil for frying
Instructions
- In a large pot, boil the potatoes until tender. Drain and mash them, then set aside to cool.
- In a food processor, pulse the fish fillets until finely chopped. Transfer to a large bowl.
- Add the cooled mashed potatoes, chopped onion, eggs, parsley, salt, pepper, and flour to the bowl with the fish. Mix until well combined.
- Shape the mixture into round patties and place them on a plate. Refrigerate for 15 minutes to firm up.
- Heat the vegetable oil in a large skillet over medium heat. Fry the fish cakes for 3-4 minutes on each side, or until golden brown and cooked through.
- Transfer the cooked fish cakes to a paper towel-lined plate to drain any excess oil.
- Serve the Norwegian fish cakes with a creamy sauce and boiled potatoes.
