Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 carrot, sliced
- 200g tofu, diced
- 4 cups vegetable broth
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp red pepper flakes
- Salt and pepper to taste
Instructions
- In a large pot, heat the sesame oil over medium heat.
- Add the garlic, onion, and carrot, and sauté until the vegetables are softened.
- Add the diced potatoes, tofu, and red pepper flakes to the pot.
- Pour in the vegetable broth and soy sauce. Bring the stew to a boil, then reduce the heat and simmer for 45 minutes, or until the potatoes are tender.
