Ingredients

  • 1 large Korean radish, peeled and cut into matchsticks
  • 1/4 cup Korean coarse sea salt
  • 2 tablespoons sweet rice flour
  • 2 tablespoons sugar
  • 1/4 cup hot pepper flakes
  • 1/4 cup fish sauce
  • 1/4 cup minced garlic
  • 1 tablespoon minced ginger
  • 4 green onions, chopped
  • 1/2 onion, thinly sliced
  • 1/2 cup water

Instructions

  1. In a large bowl, combine the radish and salt. Let it sit for 30 minutes, then rinse and drain the radish.
  2. In a small saucepan, combine the sweet rice flour, sugar, and water. Cook over medium heat, stirring constantly, until it thickens. Let it cool.
  3. In a large bowl, combine the radish, sweet rice flour mixture, hot pepper flakes, fish sauce, garlic, ginger, green onions, and onion. Mix well.
  4. Transfer the mixture into a clean glass jar, pressing down to pack the kimchi tightly. Leave some space at the top of the jar.
  5. Seal the jar and let it sit at room temperature for 1-2 days to ferment. Then refrigerate.
