Ingredients
- 1 large Korean radish, peeled and cut into matchsticks
- 1/4 cup Korean coarse sea salt
- 2 tablespoons sweet rice flour
- 2 tablespoons sugar
- 1/4 cup hot pepper flakes
- 1/4 cup fish sauce
- 1/4 cup minced garlic
- 1 tablespoon minced ginger
- 4 green onions, chopped
- 1/2 onion, thinly sliced
- 1/2 cup water
Instructions
- In a large bowl, combine the radish and salt. Let it sit for 30 minutes, then rinse and drain the radish.
- In a small saucepan, combine the sweet rice flour, sugar, and water. Cook over medium heat, stirring constantly, until it thickens. Let it cool.
- In a large bowl, combine the radish, sweet rice flour mixture, hot pepper flakes, fish sauce, garlic, ginger, green onions, and onion. Mix well.
- Transfer the mixture into a clean glass jar, pressing down to pack the kimchi tightly. Leave some space at the top of the jar.
- Seal the jar and let it sit at room temperature for 1-2 days to ferment. Then refrigerate.
