Northern Lights Curry
Northern Lights Curry is a traditional dish from Yamal Cuisine, known for its rich flavors and hearty ingredients. This warming curry is perfect for cold winter nights and will transport you to the snowy landscapes of the Arctic.
Ingredients
- 1 lb (450g) chicken, cut into bite-sized pieces
- 2 tbsp vegetable oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 tbsp Northern Lights Curry powder
- 1 can (14 oz) coconut milk
- 1 cup (240ml) chicken broth
- 2 large potatoes, peeled and diced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is soft and translucent.
- Add the chicken pieces and cook until browned on all sides.
- Stir in the Northern Lights Curry powder and cook for 1-2 minutes to toast the spices.
- Pour in the coconut milk and chicken broth, then add the diced potatoes. Season with salt and pepper.
- Simmer the curry for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender.
- Garnish with fresh cilantro before serving.
