Norwegian Apple Cinnamon Rolls

Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup milk
- 2 teaspoons active dry yeast
- 2 apples, peeled, cored, and diced
- 1/4 cup brown sugar
- 2 teaspoons ground cinnamon
- 1/4 cup chopped walnuts (optional)
Instructions
- In a large bowl, combine the flour, granulated sugar, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- In a small saucepan, heat the milk until it is warm but not boiling. Remove from heat and sprinkle the yeast over the warm milk. Let it sit for 5 minutes until foamy.
- Pour the yeast mixture into the flour mixture and stir until a dough forms. Turn the dough out onto a floured surface and knead for 5 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.
- While the dough is rising, prepare the apple filling. In a small bowl, mix together the diced apples, brown sugar, cinnamon, and chopped walnuts if using.
- Once the dough has doubled in size, punch it down and roll it out into a 12x18 inch rectangle. Spread the apple filling evenly over the dough.
- Starting from the long edge, roll the dough into a log and cut it into 12 equal pieces. Place the rolls in a greased 9x13 inch baking dish, cover, and let them rise for an additional 30 minutes.
- Preheat the oven to 375°F (190°C). Bake the rolls for 25-30 minutes or until golden brown.
- Remove from the oven and let the rolls cool slightly before serving.
