Norwegian Blueberry Oatmeal Bars

Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan.
  2. In a large bowl, mix together the rolled oats, flour, brown sugar, baking powder, and salt. Stir in the melted butter until the mixture is crumbly.
  3. Press half of the oat mixture into the bottom of the prepared baking pan.
  4. In another bowl, gently toss the blueberries with granulated sugar, lemon juice, and cornstarch until the blueberries are coated.
  5. Sprinkle the blueberry mixture over the crust in the pan. Crumble the remaining oat mixture over the blueberries.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
  7. Allow the bars to cool completely before cutting into squares and serving.
