Ingredients
- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 2 cups fresh blueberries
- 1/4 cup granulated sugar
- 2 tablespoons lemon juice
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan.
- In a large bowl, mix together the rolled oats, flour, brown sugar, baking powder, and salt. Stir in the melted butter until the mixture is crumbly.
- Press half of the oat mixture into the bottom of the prepared baking pan.
- In another bowl, gently toss the blueberries with granulated sugar, lemon juice, and cornstarch until the blueberries are coated.
- Sprinkle the blueberry mixture over the crust in the pan. Crumble the remaining oat mixture over the blueberries.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
- Allow the bars to cool completely before cutting into squares and serving.
