Norwegian Clam Chowder
Norwegian Clam Chowder is a hearty and comforting soup that is perfect for a cozy night in. This creamy chowder is packed with tender clams, potatoes, and savory flavors that will warm you up from the inside out.
Ingredients
- 2 pounds fresh clams, scrubbed
- 4 slices bacon, chopped
- 1 onion, diced
- 2 garlic cloves, minced
- 2 large potatoes, diced
- 4 cups fish or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, bring 1 cup of water to a boil. Add the clams, cover, and steam for 5-7 minutes or until the clams open. Discard any unopened clams. Remove the clams from their shells and chop them. Strain and reserve the clam broth.
- In the same pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
- Add the diced onion and garlic to the pot and sauté until softened.
- Add the diced potatoes, fish or vegetable broth, and reserved clam broth to the pot. Bring to a boil, then reduce the heat and simmer for 15-20 minutes or until the potatoes are tender.
- Stir in the chopped clams, heavy cream, and cooked bacon. Season with salt and pepper to taste. Simmer for an additional 5 minutes.
- Serve the Norwegian Clam Chowder hot, garnished with fresh parsley.
