Norwegian Clam Chowder

Ingredients

  • 2 pounds fresh clams, scrubbed
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 large potatoes, diced
  • 4 cups fish or vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, bring 1 cup of water to a boil. Add the clams, cover, and steam for 5-7 minutes or until the clams open. Discard any unopened clams. Remove the clams from their shells and chop them. Strain and reserve the clam broth.
  2. In the same pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon fat in the pot.
  3. Add the diced onion and garlic to the pot and sauté until softened.
  4. Add the diced potatoes, fish or vegetable broth, and reserved clam broth to the pot. Bring to a boil, then reduce the heat and simmer for 15-20 minutes or until the potatoes are tender.
  5. Stir in the chopped clams, heavy cream, and cooked bacon. Season with salt and pepper to taste. Simmer for an additional 5 minutes.
  6. Serve the Norwegian Clam Chowder hot, garnished with fresh parsley.
