Norwegian Cloudberry Cheesecake

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup sour cream
  • 1/4 cup all-purpose flour
  • 1 tsp vanilla extract
  • 1/2 cup cloudberry jam

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat the cream cheese and 1/2 cup sugar until smooth. Add the eggs, one at a time, beating well after each addition. Mix in the sour cream, flour, and vanilla extract until smooth.
  4. Pour the cream cheese mixture over the crust in the springform pan. Drop spoonfuls of cloudberry jam on top of the cream cheese mixture, then swirl with a knife to create a marbled effect.
  5. Bake in the preheated oven for 45 minutes, or until the center is almost set. Allow the cheesecake to cool, then refrigerate for at least 4 hours before serving.
