Ingredients

  • 200g egg noodles
  • 2 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 tsp curry powder
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Boil the egg noodles according to package instructions. Drain and set aside.
  2. Heat vegetable oil in a large pan over medium heat. Add the sliced onion and minced garlic, and sauté until fragrant.
  3. Add the bell pepper and julienned carrot to the pan, and cook until slightly softened.
  4. Stir in the cooked egg noodles, curry powder, paprika, salt, and pepper. Cook for a few more minutes until the noodles are heated through and well combined with the vegetables.
  5. Adjust seasoning if needed, then remove from heat and serve hot.
