Nqaij Qaib Zib Ntsuag is a traditional Hmong dish featuring tender beef and flavorful eggplant stir-fried with aromatic herbs and spices. This dish is a perfect balance of savory and slightly sweet flavors, making it a delightful addition to any meal.
Ingredients
- 1 lb beef, thinly sliced
- 2 Japanese eggplants, sliced
- 3 cloves garlic, minced
- 1 onion, sliced
- 1 red bell pepper, sliced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- 1/2 cup beef broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of oil in a wok or large skillet over high heat.
- Add the beef and stir-fry for 2-3 minutes until browned. Remove from the wok and set aside.
- Heat the remaining oil in the wok and add the garlic, onion, and bell pepper. Stir-fry for 2 minutes.
- Add the eggplant and continue to stir-fry for another 3-4 minutes until the vegetables are tender.
- Return the beef to the wok and add the soy sauce, oyster sauce, sugar, and beef broth. Stir well to combine.
- Season with salt and pepper to taste. Cook for an additional 2-3 minutes.
- Transfer to a serving dish and serve hot with steamed rice.
