Ingredients

  • 1 lb beef, thinly sliced
  • 2 Japanese eggplants, sliced
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1/2 cup beef broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of oil in a wok or large skillet over high heat.
  2. Add the beef and stir-fry for 2-3 minutes until browned. Remove from the wok and set aside.
  3. Heat the remaining oil in the wok and add the garlic, onion, and bell pepper. Stir-fry for 2 minutes.
  4. Add the eggplant and continue to stir-fry for another 3-4 minutes until the vegetables are tender.
  5. Return the beef to the wok and add the soy sauce, oyster sauce, sugar, and beef broth. Stir well to combine.
  6. Season with salt and pepper to taste. Cook for an additional 2-3 minutes.
  7. Transfer to a serving dish and serve hot with steamed rice.
