Ingredients

  • 8 cups beef broth
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 2-inch piece ginger, sliced
  • 2 tomatoes, diced
  • 2 carrots, sliced
  • 2 stalks lemongrass, smashed
  • 2 star anise
  • 1 cinnamon stick
  • 1 tsp coriander seeds
  • 1/4 cup fish sauce
  • 1 tbsp sugar
  • Salt and pepper to taste
  • 8 oz rice vermicelli noodles, cooked according to package instructions
  • Bean sprouts, Thai basil, cilantro, and lime wedges for serving

Instructions

  1. In a large pot, bring the beef broth to a boil.
  2. Add the beef brisket, onion, garlic, ginger, tomatoes, carrots, lemongrass, star anise, cinnamon stick, and coriander seeds to the pot.
  3. Reduce the heat to low and let the soup simmer for 1.5 hours, or until the beef is tender.
  4. Stir in the fish sauce and sugar, and season with salt and pepper to taste.
  5. Divide the cooked rice vermicelli noodles among serving bowls and ladle the hot soup over the noodles.
