Ingredients
- 1.5 lbs beef brisket, thinly sliced
- 8 cups beef broth
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 2-inch piece ginger, sliced
- 2 tomatoes, diced
- 2 carrots, sliced
- 2 stalks lemongrass, smashed
- 2 star anise
- 1 cinnamon stick
- 1 tsp coriander seeds
- 1/4 cup fish sauce
- 1 tbsp sugar
- Salt and pepper to taste
- 8 oz rice vermicelli noodles, cooked according to package instructions
- Bean sprouts, Thai basil, cilantro, and lime wedges for serving
Instructions
- In a large pot, bring the beef broth to a boil.
- Add the beef brisket, onion, garlic, ginger, tomatoes, carrots, lemongrass, star anise, cinnamon stick, and coriander seeds to the pot.
- Reduce the heat to low and let the soup simmer for 1.5 hours, or until the beef is tender.
- Stir in the fish sauce and sugar, and season with salt and pepper to taste.
- Divide the cooked rice vermicelli noodles among serving bowls and ladle the hot soup over the noodles.
- Serve the soup hot, garnished with bean sprouts, Thai basil, cilantro, and lime wedges.
