Ingredients
- 2 lbs chicken, cut into pieces
- 1 can bamboo shoots, drained and sliced
- 4 cups chicken broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1-inch ginger, sliced
- 2 tomatoes, diced
- 2 green onions, chopped
- 2 tbsp fish sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup cilantro, chopped
Instructions
- In a large pot, heat some oil over medium heat. Add the onions, garlic, and ginger. Sauté until fragrant.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for 30 minutes.
- Add the bamboo shoots, tomatoes, fish sauce, salt, and black pepper. Simmer for an additional 15 minutes.
- Stir in the green onions and cilantro. Cook for another 5 minutes.
