Ingredients

  • 2 lbs chicken, cut into pieces
  • 1 can bamboo shoots, drained and sliced
  • 4 cups chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, sliced
  • 2 tomatoes, diced
  • 2 green onions, chopped
  • 2 tbsp fish sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large pot, heat some oil over medium heat. Add the onions, garlic, and ginger. Sauté until fragrant.
  2. Add the chicken pieces to the pot and cook until browned on all sides.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for 30 minutes.
  4. Add the bamboo shoots, tomatoes, fish sauce, salt, and black pepper. Simmer for an additional 15 minutes.
