Nqaij Qaib Zib Ntsuag (hmong-style Grilled Fish)

Ingredients

  • 4 whole fish (such as trout or tilapia), cleaned and gutted
  • 1/4 cup fish sauce
  • 3 cloves garlic, minced
  • 1 tablespoon sugar
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 4 stalks lemongrass, pounded and chopped
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix together fish sauce, garlic, sugar, black pepper, and vegetable oil to make the marinade.
  3. Score the fish on both sides and rub the marinade all over the fish, including inside the cavity.
  4. Stuff the lemongrass into the cavity of the fish.
  5. Grill the fish for about 6-8 minutes on each side, or until the flesh is opaque and easily flakes with a fork.
  6. Remove the fish from the grill and sprinkle with chopped cilantro. Serve with lime wedges.
