Ingredients

  • 3 cups cooked jasmine rice
  • 1 cup fresh pineapple chunks

  • 1/2 cup frozen peas
  • 1/2 cup diced red bell pepper
  • 3 cloves garlic, minced
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
  2. Add the beaten eggs and scramble until cooked. Remove from the skillet and set aside.
  3. Heat the remaining vegetable oil in the same skillet. Add the minced garlic and cook until fragrant.
  4. Stir in the carrots, peas, and bell pepper. Cook for 3-4 minutes until the vegetables are slightly tender.
  5. Add the cooked rice and pineapple chunks to the skillet. Stir in the soy sauce and mix well with the vegetables.
  6. Return the scrambled eggs to the skillet and toss everything together. Cook for an additional 2-3 minutes.
