Ingredients
- 3 cups cooked jasmine rice
- 1 cup fresh pineapple chunks
- 1/2 cup diced carrots
- 1/2 cup frozen peas
- 1/2 cup diced red bell pepper
- 3 cloves garlic, minced
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
- Add the beaten eggs and scramble until cooked. Remove from the skillet and set aside.
- Heat the remaining vegetable oil in the same skillet. Add the minced garlic and cook until fragrant.
- Stir in the carrots, peas, and bell pepper. Cook for 3-4 minutes until the vegetables are slightly tender.
- Add the cooked rice and pineapple chunks to the skillet. Stir in the soy sauce and mix well with the vegetables.
- Return the scrambled eggs to the skillet and toss everything together. Cook for an additional 2-3 minutes.
- Season with salt and pepper to taste. Garnish with chopped green onions before serving.
