Ingredients

Instructions

  1. Heat the vegetable oil in a large pan or wok over medium heat.
  2. Add the minced garlic and stir-fry for 1-2 minutes until fragrant.
  3. Add the sliced bitter melon and onion to the pan and stir-fry for 5-7 minutes until the vegetables are slightly softened.
  4. Add the diced tomatoes, soy sauce, sugar, salt, and black pepper to the pan. Stir-fry for an additional 3-5 minutes until the tomatoes are softened and the flavors are well combined.
  5. Remove from heat and transfer to a serving dish.
