Ingredients
- 4 cups water
- 2 cups maize meal
- 1 onion, finely chopped
- 2 tomatoes, diced
- 1 cup mixed vegetables (carrots, peas, and corn)
- 1 cup vegetable broth
- 1 tsp curry powder
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- In a large pot, bring the water to a boil.
- Gradually add the maize meal to the boiling water, stirring continuously to avoid lumps.
- Reduce the heat to low and simmer the maize porridge for 30 minutes, stirring occasionally.
- In a separate pan, sauté the onion until translucent.
- Add the tomatoes, mixed vegetables, vegetable broth, curry powder, paprika, salt, and pepper to the pan. Simmer for 15 minutes.
- Serve the maize porridge in bowls and top with the vegetable stew.
