Ingredients
- 3 cups cooked rice
- 1 cup diced pineapple
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1/2 cup frozen peas
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a large pan, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Push the onion and garlic to one side of the pan, and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
- Add the diced pineapple, red bell pepper, and frozen peas to the pan. Stir-fry for 2-3 minutes.
- Add the cooked rice to the pan, along with the soy sauce. Stir well to combine all the ingredients.
- Cook for an additional 5-7 minutes, stirring occasionally, until the rice is heated through.
- Season with salt and pepper to taste.
- Remove from heat and serve hot.
