Ingredients

  • 3 cups cooked rice
  • 1 cup diced pineapple
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1/2 cup frozen peas
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pan, heat the vegetable oil over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Push the onion and garlic to one side of the pan, and pour the beaten eggs into the other side. Scramble the eggs until cooked through.
  4. Add the diced pineapple, red bell pepper, and frozen peas to the pan. Stir-fry for 2-3 minutes.
  5. Add the cooked rice to the pan, along with the soy sauce. Stir well to combine all the ingredients.
  6. Cook for an additional 5-7 minutes, stirring occasionally, until the rice is heated through.
  7. Season with salt and pepper to taste.
  8. Remove from heat and serve hot.
