Ingredients
- 1 pound fresh okra, sliced
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt to taste
- 2 tablespoons vegetable oil
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the sliced okra to the skillet and fry until crispy, about 10 minutes. Remove the okra from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until translucent.
- Add the minced garlic, chopped tomatoes, paprika, cayenne pepper, and salt. Cook for 10 minutes, stirring occasionally.
- Return the fried okra to the skillet and stir to combine with the tomato sauce. Cook for an additional 5 minutes.
- Remove from heat and serve hot.
