Ntoba Na Sauce Tomate (fried Okra With Tomato Sauce)

Ingredients

  • 1 pound fresh okra, sliced
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the sliced okra to the skillet and fry until crispy, about 10 minutes. Remove the okra from the skillet and set aside.
  3. In the same skillet, add the chopped onion and cook until translucent.
  4. Add the minced garlic, chopped tomatoes, paprika, cayenne pepper, and salt. Cook for 10 minutes, stirring occasionally.
  5. Return the fried okra to the skillet and stir to combine with the tomato sauce. Cook for an additional 5 minutes.
  6. Remove from heat and serve hot.
