Ntoumou (spicy Okra Stew)
Ntoumou is a traditional Gabonese dish that features okra stewed in a flavorful and spicy tomato-based sauce. This dish is popular in Gabon and is often served with fufu or rice.
Ingredients
- 1 lb okra, chopped
- 1 onion, finely chopped
- 3 tomatoes, diced
- 2 cloves garlic, minced
- 1 scotch bonnet pepper, chopped
- 1 cup vegetable broth
- 2 tablespoons tomato paste
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- Salt to taste
- 2 tablespoons oil
Instructions
- In a large pot, heat the oil over medium heat.
- Add the onions, garlic, and scotch bonnet pepper. Sauté until the onions are translucent.
- Add the tomatoes, tomato paste, paprika, cayenne pepper, and salt. Cook for 5 minutes, stirring occasionally.
- Add the okra and vegetable broth. Stir to combine, then cover and simmer for 45 minutes, stirring occasionally.
- Adjust seasoning if needed and serve hot.
