Ingredients

  • 1 lb okra, chopped
  • 1 onion, finely chopped
  • 3 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper, chopped
  • 1 cup vegetable broth
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • Salt to taste
  • 2 tablespoons oil

Instructions

  1. In a large pot, heat the oil over medium heat.
  2. Add the onions, garlic, and scotch bonnet pepper. Sauté until the onions are translucent.
  3. Add the tomatoes, tomato paste, paprika, cayenne pepper, and salt. Cook for 5 minutes, stirring occasionally.
  4. Add the okra and vegetable broth. Stir to combine, then cover and simmer for 45 minutes, stirring occasionally.
  5. Adjust seasoning if needed and serve hot.
