Ingredients
- 1 lb (450g) lamb leg or shoulder, cut into 1-inch cubes
- 3 tbsp Sichuan peppercorns
- 2 tbsp cumin seeds
- 4 cloves garlic, minced
- 2 tbsp soy sauce
- 2 tbsp vegetable oil
- 1 tsp salt
- 1 tsp sugar
- 1/2 tsp chili powder
- 1/2 tsp ground ginger
- 1/4 tsp ground white pepper
- 1/4 cup chopped scallions (for garnish)
Instructions
- In a dry pan, toast the Sichuan peppercorns and cumin seeds over medium heat until fragrant, about 2-3 minutes. Let them cool, then grind them into a fine powder using a spice grinder or mortar and pestle.
- In a large bowl, combine the ground Sichuan peppercorn and cumin mixture, minced garlic, soy sauce, vegetable oil, salt, sugar, chili powder, ground ginger, and white pepper. Mix well to form a marinade.
- Add the lamb cubes to the marinade, making sure each piece is well coated. Cover the bowl and refrigerate for at least 2 hours, or overnight for best flavor.
- Preheat the grill to medium-high heat. Thread the marinated lamb cubes onto skewers, leaving a little space between each piece.
- Grill the lamb skewers for about 8-10 minutes, turning occasionally, until they are cooked to your desired doneness and have a nice charred exterior.
- Remove the lamb skewers from the grill and let them rest for a few minutes. Sprinkle with chopped scallions before serving.
