Ingredients

  • 1 lb (450g) lamb leg or shoulder, cut into 1-inch cubes
  • 3 tbsp Sichuan peppercorns
  • 2 tbsp cumin seeds
  • 4 cloves garlic, minced
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 1 tsp sugar
  • 1/2 tsp chili powder
  • 1/2 tsp ground ginger
  • 1/4 tsp ground white pepper
  • 1/4 cup chopped scallions (for garnish)

Instructions

  1. In a dry pan, toast the Sichuan peppercorns and cumin seeds over medium heat until fragrant, about 2-3 minutes. Let them cool, then grind them into a fine powder using a spice grinder or mortar and pestle.
  2. In a large bowl, combine the ground Sichuan peppercorn and cumin mixture, minced garlic, soy sauce, vegetable oil, salt, sugar, chili powder, ground ginger, and white pepper. Mix well to form a marinade.
  3. Add the lamb cubes to the marinade, making sure each piece is well coated. Cover the bowl and refrigerate for at least 2 hours, or overnight for best flavor.
  4. Preheat the grill to medium-high heat. Thread the marinated lamb cubes onto skewers, leaving a little space between each piece.
