Nunavut (eskimo Sushi)
Nunavut, also known as Eskimo Sushi, is a traditional dish from Yup'ik Cuisine that combines the flavors of the Arctic with a unique preparation method.
Ingredients
- 1 lb fresh Arctic char, thinly sliced
- 1 cup cooked quinoa
- 1 cucumber, julienned
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 teaspoon grated ginger
- 1 teaspoon wasabi paste
- 4 nori seaweed sheets
Instructions
- Prepare the sushi rice by mixing the cooked quinoa with the rice vinegar and a pinch of salt. Let it cool.
- In a small bowl, whisk together the soy sauce, sesame oil, honey, ginger, and wasabi to make the dipping sauce.
- Place a nori sheet on a bamboo sushi mat. Spread a thin layer of the sushi rice over the nori, leaving a small border at the top.
- Arrange a few slices of Arctic char and julienned cucumber in the center of the rice.
- Roll the sushi tightly using the bamboo mat, then slice it into bite-sized pieces.
- Serve the Nunavut (Eskimo Sushi) with the dipping sauce.
