Nunavut (eskimo Tacos)
Nunavut, also known as Eskimo Tacos, is a traditional dish from Yup'ik Cuisine that features a delicious combination of ground meat, vegetables, and toppings served on a crispy fried bread.
Ingredients
- 1 lb ground caribou meat
- 1 onion, diced
- 2 tomatoes, chopped
- 1 cup shredded cabbage
- 1/2 cup diced bell peppers
- 1/4 cup chopped fresh parsley
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 cup vegetable oil
- 8 pieces of fry bread
Instructions
- In a skillet, cook the ground caribou meat and diced onion over medium heat until the meat is browned and the onion is tender.
- Add the chopped tomatoes, shredded cabbage, diced bell peppers, and chopped parsley to the skillet. Season with salt, black pepper, and garlic powder. Cook for an additional 5-7 minutes, stirring occasionally.
- While the meat and vegetable mixture is cooking, heat the vegetable oil in a separate skillet over medium-high heat. Fry the pieces of fry bread until golden brown and crispy, then drain on paper towels.
- To assemble the Nunavut (Eskimo Tacos), spoon the meat and vegetable mixture onto the fried bread. Serve with your choice of toppings such as shredded cheese, sour cream, and hot sauce.
