Ingredients

  • 1 lb ground caribou meat
  • 1 onion, diced
  • 2 tomatoes, chopped
  • 1 cup shredded cabbage
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped fresh parsley
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 cup vegetable oil
  • 8 pieces of fry bread

Instructions

  1. In a skillet, cook the ground caribou meat and diced onion over medium heat until the meat is browned and the onion is tender.
  2. Add the chopped tomatoes, shredded cabbage, diced bell peppers, and chopped parsley to the skillet. Season with salt, black pepper, and garlic powder. Cook for an additional 5-7 minutes, stirring occasionally.
  3. While the meat and vegetable mixture is cooking, heat the vegetable oil in a separate skillet over medium-high heat. Fry the pieces of fry bread until golden brown and crispy, then drain on paper towels.
  4. To assemble the Nunavut (Eskimo Tacos), spoon the meat and vegetable mixture onto the fried bread. Serve with your choice of toppings such as shredded cheese, sour cream, and hot sauce.
