Ingredients

  • 2 cups dried chickpeas, soaked overnight
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Heat some oil in a large pot over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic, carrots, and potatoes to the pot. Cook for a few minutes until the vegetables start to soften.
  3. Stir in the cumin, paprika, and cinnamon, and cook for another minute to toast the spices.
  4. Drain the soaked chickpeas and add them to the pot. Pour in the vegetable broth and season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat and let it simmer for about 1 hour, or until the chickpeas are tender.
  6. Once the stew is ready, taste and adjust the seasoning if needed. Serve hot, garnished with chopped fresh parsley.
