Nush O Pusht (armenian Chickpea Stew)
Nush o Pusht is a traditional Armenian chickpea stew that is hearty, flavorful, and perfect for a cozy meal. This stew is packed with protein and warm spices, making it a comforting and nutritious dish.
Ingredients
- 2 cups dried chickpeas, soaked overnight
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- 4 cups vegetable broth
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Heat some oil in a large pot over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic, carrots, and potatoes to the pot. Cook for a few minutes until the vegetables start to soften.
- Stir in the cumin, paprika, and cinnamon, and cook for another minute to toast the spices.
- Drain the soaked chickpeas and add them to the pot. Pour in the vegetable broth and season with salt and pepper.
- Bring the stew to a boil, then reduce the heat and let it simmer for about 1 hour, or until the chickpeas are tender.
- Once the stew is ready, taste and adjust the seasoning if needed. Serve hot, garnished with chopped fresh parsley.
