Nut-free Chicken Fajita Bowl

Ingredients
- 1 pound boneless, skinless chicken breasts, sliced
- 2 bell peppers, sliced
- 1 onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 4 cups cooked brown rice
- 1 avocado, sliced
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the sliced chicken to the skillet and season with chili powder, cumin, paprika, garlic powder, salt, and pepper. Cook for 5-6 minutes or until the chicken is cooked through. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the bell peppers and onion until they are tender-crisp, about 5-6 minutes.
- Divide the cooked rice among 4 bowls and top with the cooked chicken, sautéed bell peppers and onions, sliced avocado, and fresh cilantro.
- Serve with lime wedges for squeezing over the fajita bowls.
