Nut-free Chicken Fajita Bowl

Ingredients

  • 1 pound boneless, skinless chicken breasts, sliced
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 cups cooked brown rice
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  2. Add the sliced chicken to the skillet and season with chili powder, cumin, paprika, garlic powder, salt, and pepper. Cook for 5-6 minutes or until the chicken is cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the bell peppers and onion until they are tender-crisp, about 5-6 minutes.
  4. Divide the cooked rice among 4 bowls and top with the cooked chicken, sautéed bell peppers and onions, sliced avocado, and fresh cilantro.
  5. Serve with lime wedges for squeezing over the fajita bowls.
