Nut-free Eggplant Parmesan
Eggplant Parmesan is a classic Italian dish that is typically made with nuts, but this nut-free version is just as delicious and perfect for those with nut allergies.
Ingredients
- 1 large eggplant, sliced into 1/2 inch rounds
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Place the flour, beaten eggs, and breadcrumbs in three separate shallow dishes.
- Season the breadcrumbs with oregano, basil, garlic powder, salt, and pepper.
- Dredge each eggplant slice in the flour, then dip into the beaten eggs, and finally coat with the seasoned breadcrumbs.
- Heat the olive oil in a large skillet over medium heat. Cook the breaded eggplant slices in batches until golden brown on both sides, about 3-4 minutes per side. Add more oil as needed.
- Spread 1 cup of marinara sauce in the bottom of a 9x13 inch baking dish. Arrange half of the cooked eggplant slices over the sauce. Top with half of the mozzarella and Parmesan cheeses. Repeat the layers with the remaining sauce, eggplant, and cheeses.
- Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
- Let the eggplant Parmesan rest for 5 minutes before serving.
