- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 zucchini, diced
- 1 cup small pasta (such as ditalini or elbow)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and cook until the vegetables are softened, about 5 minutes.
- Add the garlic and cook for an additional 1-2 minutes.
- Stir in the diced tomatoes, vegetable broth, kidney beans, cannellini beans, zucchini, pasta, oregano, and basil. Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the pasta is cooked and the vegetables are tender.
