Nut-free Shrimp Scampi

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1/4 cup butter
  • 1/4 cup white wine
  • 2 tablespoons lemon juice
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley
  • 8 ounces linguine or spaghetti

Instructions

  1. In a large pot, bring water to a boil and cook the pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, melt the butter over medium heat. Add the minced garlic and red pepper flakes, and cook for 1-2 minutes until fragrant.
  3. Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque.
  4. Pour in the white wine and lemon juice, and let the mixture simmer for 2-3 minutes until slightly reduced.
  5. Season with salt and pepper to taste, then add the cooked pasta to the skillet and toss to coat with the sauce.
  6. Sprinkle with chopped parsley and serve hot.
