Nut-free Sweet And Sour Cauliflower
This nut-free sweet and sour cauliflower recipe is a delicious and allergy-friendly twist on a classic dish. The tangy and sweet flavors combined with the crispy cauliflower make it a perfect choice for a family-friendly meal.
Ingredients
- 1 head of cauliflower, cut into florets
- 1 cup of pineapple chunks
- 1 red bell pepper, diced
- 1/2 cup of tomato ketchup
- 1/4 cup of rice vinegar
- 3 tablespoons of brown sugar
- 2 tablespoons of soy sauce
- 1 tablespoon of cornstarch
- 1 teaspoon of garlic powder
- 1 teaspoon of ginger, grated
- 1/4 cup of water
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together the rice vinegar, brown sugar, soy sauce, cornstarch, garlic powder, ginger, and water to make the sweet and sour sauce. Set aside.
- In a large skillet, heat some oil over medium-high heat. Add the cauliflower florets and cook until they are golden and crispy, about 8-10 minutes. Remove the cauliflower from the skillet and set aside.
- In the same skillet, add the diced red bell pepper and pineapple chunks. Cook for 2-3 minutes until they start to soften.
- Pour the sweet and sour sauce over the peppers and pineapple. Stir and cook until the sauce thickens, about 2-3 minutes.
- Add the crispy cauliflower back into the skillet and toss to coat with the sweet and sour sauce.
- Season with salt and pepper to taste.
- Serve the nut-free sweet and sour cauliflower over steamed rice or quinoa.
