Nut-free Sweet And Sour Cauliflower

Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 cup of pineapple chunks
  • 1 red bell pepper, diced
  • 1/2 cup of tomato ketchup
  • 1/4 cup of rice vinegar
  • 3 tablespoons of brown sugar
  • 2 tablespoons of soy sauce
  • 1 tablespoon of cornstarch
  • 1 teaspoon of garlic powder
  • 1 teaspoon of ginger, grated
  • 1/4 cup of water
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together the rice vinegar, brown sugar, soy sauce, cornstarch, garlic powder, ginger, and water to make the sweet and sour sauce. Set aside.
  2. In a large skillet, heat some oil over medium-high heat. Add the cauliflower florets and cook until they are golden and crispy, about 8-10 minutes. Remove the cauliflower from the skillet and set aside.
  3. In the same skillet, add the diced red bell pepper and pineapple chunks. Cook for 2-3 minutes until they start to soften.
  4. Pour the sweet and sour sauce over the peppers and pineapple. Stir and cook until the sauce thickens, about 2-3 minutes.
  5. Add the crispy cauliflower back into the skillet and toss to coat with the sweet and sour sauce.
  6. Season with salt and pepper to taste.
  7. Serve the nut-free sweet and sour cauliflower over steamed rice or quinoa.
