Nyama Choma (fiery Hot Pepper Stew)

Ingredients

  • 2 lbs beef, cut into large chunks
  • 4 tomatoes, chopped
  • 2 onions, sliced
  • 4-6 hot peppers, finely chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp vegetable oil
  • Salt to taste

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  3. Add the hot peppers and tomatoes. Cook for 10 minutes, stirring occasionally.
  4. Season the beef chunks with salt and add them to the pot. Cook for 10 minutes, stirring occasionally.
  5. Pour in enough water to cover the meat, then cover the pot and simmer for 40 minutes or until the meat is tender.
  6. Once the meat is tender, uncover the pot and let the stew simmer for an additional 10 minutes to thicken the sauce.
  7. Adjust seasoning if needed, then serve the Nyama Choma hot with your favorite side dishes.
